With experience in benchmark projects in the region, he distinguished himself at Grupo MLE, where he held the position of executive chef. A self-taught chef, he defines himself as a dynamic, versatile, and constantly evolving professional, driven by his passion for gastronomy.
At the Aqui Acolá Festival, Chef Fábio Vieira will present a couscous risotto with seared tuna, a gastronomic offering that combines tradition and contemporary flair. Inspired by the art of couscous, the dish combines flavors and textures in a harmonious fusion of palates, highlighting the creativity and identity of Madeiran cuisine through a modern and sophisticated approach.
